red pepper flakes and freshly ground black pepper to taste
1/2 cup fresh basil leaves sliced into thin pieces

For the pizza:
Store bought pizza dough (1/2 lb. per pizza) We love Trader Joe's gluten free pizza dough

Mediterranean Style:
1/4 cup kalamata olives, slice in half and drained
1/4 cup jarred artichoke hearts, roughly chopped and drained
1/4 cup jarred sundried tomatoes, chopped
1/2 cup shredded mozzarella cheese
or
1 package of prosciutto, roughly chopped
1 package of fresh arugula

INSTRUCTIONS
Preheat oven to 400 degrees
Take the pizza dough out of the oven to allow to come to room temperature
In a baking dish, add the ingredients for the sauce - Feta, tomatoes and garlic. Drizzle with the olive oil and peppers. Bake for 35 - 40 minutes until the tomatoes are bursting and the feta is golden brown.
Remove from oven and increase the oven temperature to 500 degrees.
Smash everything together to create a chunky sauce and then add the basil and stir. Put aside.
While the sauce is baking, grease a large baking sheet lightly with olive oil. Roll your dough out to the approximate shape of the pan and transfer to the pan.
Using lightly oiled fingers continue to stretch out the dough until it fits the pan.
Once the sauce is ready, you can start building your pizza! Spread the sauce all over the dough leaving about a 1/2 inch around. Top evenly with all of the other ingredients. Our quantities are just a suggestion - feel free to use as much as you want!
Bake pizza for about 20 to 30 minutes in the middle of the oven, until the crust and all of the toppings look golden brown.
Let sit for a few minutes before you cut into rectangles.
